Say hello to Joe Cervantez, executive chef of Killen’s Steakhouse. Arguably one of the best steakhouses in Houston, if not the country… and definitely a favorite of mine. Joe might be one of the younger executive chefs in Houston, but he has quite the resume. Before joining Killen’s he was learned the ropes at Brennan’s under executive chef Danny Trace.
During our conversation about the dishes he likes to make at home from time to time Joe mentioned his wife does not eat red meat, although she does love seafood. So thats what he makes a lot of times. So for our shoot he made pasta from scratch which was part of the wild mushroom ravioli, grilled shrimp chimichurri, mixed green salad with candied walnuts, shaved granny smith apples, and raspberry vinaigrette. He also made heirloom tomato burchetta and garlic bread to go along with all of the amazing food.
During our shoot Joe’s best, and former Shoot My Chef feature, Chris Loftis came by to visit. Chris and Joe have known each other from childhood and even attended culinary school together. Their kids are the same age and despite the rigorous schedule both of them have, they still find the time to get together and and hang out. And top it all off, they’re both amazing chefs and I have no doubts in the years to come both Joe and Chris will be some of the top chefs in the Houston area.
