Say hello to chef Justin Basye, the R&D chef at Pappas Restaurants, and his wife Angela. If Angela looks a bit familiar - and she should - it's because she was on the blog a little over a year ago with her best friend Jody Stevens. And this time around Jody joined us for our shoot for And what do the Basyes like cooking at home with friends?
Justin and Angela love fried chicken. The recipe comes from Angela and Justin's grandmother. The chicken is brined in pickle and pepperoncini juice, then soaked in buttermilk and hot sauce. Then its dredged in seasoned flour and fried in peanut oil. Angela also made yukon mashed potatoes with garlic cream gravy and green beans which are made in caramelized onion and ham broth. The beans are braised in the broth with San Marzano tomatoes.
For desert Angela makes a coconut cream pie which is a recipe she got from her grandmother, but she makes it with a slight twist. Instead of whole milk she uses three different kind, much like Tres Leches. So essentially the pie ends up being a tres leches coconut cream pie. And since our shoot was around Valentine, Jody brought over a heart shaped dark chocolate nutella cake with ganache.
The whole session was a comfort food fest, wine, and a lot whole lot of laughter. If every gathering at the Basye house is like this, I might just have to leave my camera at home and just go for the food.
