Say hello to executive sous chef Martin Weaver of KUU and his girlfriend, pastry chef Nguyet Nguyen of Hubbell & Hudson. On their spare time these two love foraging in the wild for food. They have some favorite spots in the Houston area they took me along with and we ended up finding some ringless honey mushrooms Martin used for his dish. For our shoot Martin prepared pan seared shrimp with okra and white patty pan squash, sautéed kale and ringless honey mushrooms. Nguyet made a coconut oil pumpkin spiced muffin with Texas bourbon caramel.
Even though I learned a few things about foraging during this shoot, don't look for me in the woods around Houston looking for food. I'll leave that to the people that know what they're doing, like Martin and Nguyet.
