Say hello to Samantha Mendoza, executive pastry chef over at Triniti Restaurant and the upcoming FM 903 Bakery. She's quite the talented chef and she's only in her mid 20s! For our shoot Samantha invited me to her parents house which sits on 6 acres far outside of Houston. There's a private lake full of fish, a kitchen that will cook for large parties, a patio great for entertaining, and a restaurant grade margarita machine in the kitchen which is always ready to pour. Friends and family often get together at the house for drinks on the patio, fishing, and Samantha's cooking. On this particular Sunday she made tomato basil, prosciutto, brown beech mushrooms, button mushrooms, heirloom tomato, red onions, cheese curds, and mozzarella pizza and capped off dinner with an absolutely delicious cinnamon apple pie. If you'd like to taste the pie for yourself, head over to Triniti every weekend for Samantha's pop-up because she usually serves has the pie as part of the menu.
