Say hello to chef Mark Holley, executive chef and owner of Holley's Seafood Restaurant & Oyster Bar. Mark is a legend in the Houston food scene and is responsible for helping start the careers of some of the best chefs we have now in this city. His history is as impressive as his 30+ years of cooking in Houston and other cities around the country. Two to three times a year Mark makes a very special dinner for his family. His soon-to-be wife Yvonne, her son Che (who also works at the restaurant while he attends school), his daughter Britney, and his grandson Cayden all join in on the cooking. Mark's non-traditional lasagna includes spiced cinnamon, nutmeg, three types of meats and cheeses, and even the meat is simmered with a whole bottle of red wine for some added flavor. Yvonne prepared a caesar salad with red onions, roasted garlic dressing, and anchovies (Mark's favorite).
As the smell of the lasagna cooking in the oven filled the house, we spent an hour sitting and talking about the family, Mark and Yvonne's upcoming wedding, and how the restaurant came to be. But as soon as the lasagna was done and done photographed, I can say without a doubt this was *the* best lasagna I've ever had. It was so good that I think from now on every lasagna I have will be judged against it.
