Say hello to the award winning, 3 times James Beard Award nominee, and cookbook author, chef Hugo Ortega and his wonderful family. His wife Tracy, their daughter Sophia, and his brother - and pastry chef - Ruben. Tracy and Hugo are owners of Backstreet Cafe, Hugo's Restaurant, and their newest addition Caracol here in Houston. On a good number of Saturdays you can find the Ortegas in Galveston shopping at the local seafood market and making some amazing seafood at their beach house nearby. For our shoot Hugo and Ruben prepared a ceviche of gulf red snapper fresh from the local market, Texas catfish court-bullion, Tracy prepared a traditional caesar salad, and Ruben with the help of Sophia made a fresh strawberry ice cream with rhubarb conserve and oat streusel. I hope the pictures below do the food justice and hopefully capture how delicious each dish really was.
